Many children in Tajikistan and around the world depend on
school lunch programs to provide the bulk of their nutrition each day.6
The use of soy-fortified wheat flour added up to 40 percent
more protein in the breads and other wheat-based foods typically eaten in
Tajikistan and many other countries around the world. WISHH worked with the
North American Millers' Association, World Food Programme (WFP) and the
National Soybean Research Laboratory to field test the soy-fortified wheat
flour in schools, commercial bakeries and home kitchens in Tajikistan. The
Archer Daniels Midland Company provided additional soy-fortified wheat flour
that WFP is now testing in Afghanistan.6
